  • About This Coffee: Grown at Finca Casa de Piedra in Costa Rica’s Tarrazú region, this lot comes from Café Directo, a family-run project founded in 2013 by father and daughter team Gerardo and Jennifer Arias. With over 30 years of experience in producing and processing specialty coffees, their work focuses on high-quality microlots alongside a commitment to fair, ethical trade and environmentally responsible farming.

    Set at elevations of up to 1,800 metres, the farm benefits from a unique microclimate and rich soils, allowing a range of varieties to thrive. Every step of production is handled with care, beginning with precise cherry selection, where Brix levels are measured to ensure optimal ripeness at harvest.

    This coffee undergoes an anaerobic natural process, where the cherries are first pre-dried before being sealed for extended fermentation in carefully controlled conditions. Temperature, sugar levels, and the development of aromas are all closely monitored throughout. After fermentation, the coffee is slowly dried on raised beds for around 30 days, helping to develop its depth, sweetness, and complexity in the cup.
